Reader Reviews The Bash and Chop by Progressive was formerly marketed under the name of The Galloping Gourmet, Graham Kerr. I seem to remember Mr. Kerr waxing enthusiastic about Progressive allowing him to help design this particular device, as it was his idea, originally. This is very similar to a dough scraper, with one significant difference: It has a side that can lie flat on the surface, such as the surface of a cutting or chopping board, which allows this particular device to be used to bash...garlic, for example or ginger. Garlic needs to be bashed for several reasons: 1st, for removing skins, and 2nd, beginning the chopping process, alongside ginger, which is treated in nearly the same way. The "-N- Chop" part of this product's name is more problematic...the edge provided is not sufficient for chopping any significant types or volume of vegetables, so, the cook or chef's knife would be the preferred method of finishing any chopping or slicing chore, however, the Bash -N- Chop reinserts itself into the food prep equation at the end of all the chopping, thusly: The perfectly chopped...garlic, ginger, etc. lies on the board, small piles of nearly microscopic cubes of flavor, waiting to be lovingly added to your culinary work of art, but your hands are inadequate to the task and the edge of your knife objects strongly to such a menial and dulling task. Bash -N- Chop, to the rescue! The same flat side that was created to bash allows the Bash -N- Chop to be used as a nearly perfect board scraper, picking up your finely diced nuggets of flavor and depositing them in your creation, just at the right time and the nearly sharpened edge allows you to get all the juices that might have been released, as well. Your Bash -N- Chop has one more use, to me. The quasi-sharpened edge is also marked with 1 inch incremental marks and as small as 1/8 inch marks are indicated and the marks are handy for measuring...anything you might need to measure. I find this tool invaluable, so much so, that I usually wash it by hand, rather than allow it to run through the dishwasher cycle and be unreachable or unuasble for any length of time.
